History of Lasagna. lasagna, lasagne (luh-ZAHN-yuh) - (1) Pasta in flat, very wide strips that is almost always used in baked dishes. (2) A dish made by baking such pasta with layers of sauce and fillings such as cheese or meat. History: Like many things, the origins of pasta and how lasagna was first made are lost in the mists of prehistory. We can only assume that pasta was "invented" by the peoples living in the Mediterranean area some time after our ancestors had learned to cultivate cereals and to grind them into flour. However, the origins of 'macaroni' in Italy go back as far as the time of the Ancient Romans who gave the credit to the 'Gods'. Some historians think that the word "maccheroni" is derived from the Sicilian word "maccarruni" meaning "made into a dough by force." Some also think the word "lasagne" came from the Greek "lasanon," a chamber pot. The Romans adopted the word for any cooking pot; lasagne is the pasta dish cooked in the lasanum. A 4th century B.C. Etruscan tomb was found at Cerveteri in Tuscany, that has murals with images of knives, a rolling pin, and an object that looks very similar to our modern wheel cutter, the one used for giving fluted edges to fresh pasta, such as pappardelle or tagliatelle. "Laganaturo" is a word still in use in Neapolitan dialect to indicate the rolling pin used to roll out the pasta. In Acient Rome it seems that only the wealthiest citizen could afford to eat pasta. A satire of Horatio relates, the sheets of cooked pasta among the Romans were called "Laganum." The "Laganum" is the ancestor of the noodles which are still called "Lagane" in many parts of Southern Italy. The first lasagna was probably made of spelt (a kind of cereal like wheat, but far more resistant against bad weather and diseases).

Horace Flaccus (65 B.C.-8 B.C.)
Horace Flaccus (65 B.C.-8 B.C.) describes his own frugal supper: "and so I come home in the evening to eat a bowl of leaks, chick peas and lagane." In 1st century A.D., Marcus Gavius Apicio's cookery book called De re coquinaria, Book IV, lagane are mentioned again, this time worked as a food that was almost symbolic of "rich people's fare". They are in fact layered with various types of meat and fish, boiled and seasoned in an endless variety of ways." Apicio's text goes into a detailed description of how to prepare the meat and the sauce but it does not explain how to make the lagane, proof that this type of pasta was well-known at the time and everyone knew how to make it. Types of pasta like lasagne were also know in Ancient Greece and Rome, and vermicelli in medieval Italy. Forcellini (1688-1768) in his Lexicon called Totius Latinitatis, explains that lagane are thin strips of semolina and water, cooked in a fatty broth and seasoned with cheese, pepper, saffron and cinnamon.
